Grilled Tuna Packets

4 tuna steaks (4 ounces each)
3/4 cup sliced mushrooms
8 baby carrots

1 medium red pepper, cut into strips
1 tablespoon lemon juice
1/4 teaspoon garlic powder
1/8 teaspoon pepper
1 tablespoon chopped fresh parsley

Heat grill. Place one tuna steak on each of four pieces of extra-strength aluminum foil, measuring about 16 inches by 12 inches. Sprinkle with garlic powder, pepper and parsley, and add vegetables.

Wrap each packet, allowing space for heat expansion. Place packets with the seam side up on grill, using medium heat. Cook 15 to 20 minutes or until fish flakes easily. Rotate packets on grill throughout cooking to evenly disperse heat.
